TWD BCM Granola Energy Bars


I’ve eaten at least one of these every day since I made them.  I ate two today alone.  They are delicious.  After tasting one, Paul said I need to start making these every week.  At first I was annoyed—there are only so many hours in a day!—but then I took a breath and thought about how easy these were.  I really could make them every week.  They’re also infinitely adaptable.  I think I could make them every week and never get bored of them.  This week I stayed true to the recipe—coconut, pumpkin seeds, sunflower seeds, slivered almonds, dried cherries, and mango.  Next I want to try crystallized ginger and chocolate chips.  I’m sure I won’t actually make these every week, but I do hope to start eating them a lot more often. 


(How many of you individually wrapped these after making them?  Paul laughed at me for doing it, so I hope I was not the only one!)

  3. Raising hand! Me, me, me!!! Individually wrapped makes them for a quick grab-and-go snack! :) Aren't these the best?!! Loved them.

  4. Yes to chocolate and ginger and I heard someone else mention cardamon, and orange. Maybe not all together but a few. Glad yours turned out great!

  5. I know some people did! I cut the slab in half and have been slicing bars and squares off of it. I'll probably half the recipe for future versions because it was A LOT of granola bars for just the two of us.

  6. I put mine in a tin and they got too soft…I bet individually wrapping was a better option! Yours look great…glad you enjoyed them!

  7. Same here, I can see me making these at least a couple times a month and changing up the nuts and fruits and seeds to keep it all interesting. Yours look wonderful...I love seeing them with their parchment paper still on. Feels like I am there! :-)

  9. Individual wrapping tends to be a little silly in my house since everything gets devoured so quickly. However, I'm sure with this recipe it would allow you to freeze them and they would keep longer. Looks like yours were greatly enjoyed.

  10. I was a little short on dried cranberries and saw that I had some dried mango, but I was too chicken to add it. Kudos to you! BTW, I wrapped all of mine individually, too.
