FFWD Next-Day Beef Salad



I was tempted to skip this one since I don't eat beef, but the other ingredients sounded excellent to me so I decided to try it with chicken.  I roasted some bone-in chicken breasts the day before, so all I had to do was chop up the chicken and other ingredients and assemble.  Served over arugula, and with cheese and crackers alongside, I thought this made an excellent weeknight dinner.  I loved the combination of salty (olives and cornichons) and sweet (apple and red pepper) with the chicken.  I also used both kinds of mustard and thought that was a must (at least for this mustard-loving cook).  Only Charlotte was not a fan.  She choose to eat her chicken plain.  Oh well.  More salad for us!

    beef in the freezer, I will definitely give that a try. This would make a great l summer salad too, I think. Have a great weekend.

  2. I'm with Ro, I always have more roasted chicken, then usually just make a "regular" chicken salad - yours sounds way better! And looks it too! Happy that you enjoyed it so much. Hope your weekend is wonderful!

  3. Great idea. I think that the point of this recipe was that it can really be made with whatever you've got in the pantry, so why the heck not change up the main ingredient. I cook chicken far more often than steak so it's good to know that this concept works equally well with white meat.

  4. LOL can't blame her, mustard isn't usually too well appreciated by the littles. but at least this salad is good! I bet it would be good with chicken too!

  5. I can imagine this would be good with chicken (or a number of other proteins, for that matter). I can see why Charlotte took her chicken plain, though - I was almost an adult before I liked mustardy dishes, myself.
