FFWD Fresh Tuna, Mozzarella, and Basil Pizza
The "rules" for eating while pregnant or nursing are enough to drive a sane person crazy, and I probably wasn't totally sane to begin with. They're numerous, vary from source to source, and based on research that's suggestive at best (and usually merely correlational). The whole debate about eating fish is enough to make my head spin. Without getting into it and saying something that might get me in trouble, I'll just say that I've been generally avoiding sushi grade tuna. For this recipe, I decided to substitute some wild-caught salmon in it's place. I wasn't totally sure about eating the salmon raw, so I pan-seared it on very high heat until it was almost cooked in the center before proceeding with the recipe. While I was being "wild and crazy" and making substitutions (everything's relative, right?), I decided to use some French goat's milk feta that I had in the fridge instead of buying fresh mozzarella. I was nervous about the substitutions--the recipe seemed like such an odd combination of flavors to begin with and my substitutions probably made it even crazier--but actually really enjoyed the finished dish. I don't normally serve cheese with fish, but for some reason the combined flavors really worked together. Maybe it was the puff pastry. I can't think of anything that wouldn't taste good on top of Dufour Puff Pastry. In a smaller version, I think these would make a fun appetizer for a party if I ever have time to entertain again.

ReplyDeleteI'm not a big fish and cheese person either but I think tuna, and salmon or any strong fish would probably work. I don't remember nursing eating rules? Listen to your body and eat what you feel like eating. Raw is probably not a great idea. I ate differently both in pregnancy and nursing with both of my kids and the funny thing is what I craved is what they love to eat now!

I actually thought about doing this with smoked salmon since it is not always easy to find sashimi grade tuna.

My friend at work made once the best scrambled eggs with smoked salmon and feta, so your combination totally makes sense.
ReplyDeleteI have most of the ingredients in the house to make the pizza, but somehow tuna and mozzarella don't go together in my head. The mixed opinions this week are not helping either. :)
I think quite a few of us were looking for substitutes this week. Your version sounds delicious. I have a recipe for salmon steaks cooked with goat cheese, so your combination doesn't sound at all weird.

ReplyDeleteI give you a lot of credit for juggling these recipes with your dietary concerns. And being an expectant or nursing mother is a huge concern (yes, along with all of the assorted confusion). You knocked it out of the park with your creativity that met your needs and the FFWD schedule- and it is fab that it tasted wonderful too. I really would love to get my hands on that brand of puff pastry- I will have to keep an eye out for it !
