FFWD Salmon Rillettes


I wasn't a fan of the sardine rillettes, was pretty lukewarm on the tuna rillettes, but these I really liked.  In my book it's really hard to go wrong when the main ingredients are fresh salmon, smoked salmon, and butter.  I think next time I'll try the David Lebovitz salmon rillettes recipe that Trevor raves about, but this is definitely a concept that I'll use again.  I'm trying to eat less carbs in the evening (am I still allowed to call it "baby weight" now that Charlotte's one? and did I really type that after a sentence about my love for butter?) and so I ate this on cucumber slices, but I also served some baguette slices for Paul.  Alongside we had some sauteed spinach, and a Lettuce, Spring Onion and Cheese Tart that I'm going to write about for the Cottage Cooking Club.  As I've said many times, when it's just Paul and I we almost never bother with an appetizer course, but this definitely would be a great appetizer if you were entertaining.

  1. Oooh, serving this on cucumber slices sounds totally refreshing, regardless of whether you're watching the carbs. I thought this was the prettiest version of rillettes that we've made.

  3. You absolutely serve the best meals to that husband of yours. I might make the lettuce, spring onion and cheese tart also. It sounded so innovative - who would have thought. Although I believe these were the "fishiest" of the three rillettes and had the strongest flavoring, they were also my favorite. I decided it was the butter that put it over the top. I also looked at David's recipe and thought it looked good. About that baby weight. Bravo for you for tying to help the baby weight disappear. Not easy. I actually think cucumbers would be great with this mix.

  4. Dear Jora, your Salmon Rillettes look wonderful - we so enjoyed that recipe as well and I could not agree with you more, these rillettes would make a great appetizer when entertaining - which we do get to do much these days. But the kids devoured them and I plan on making them again.
    As far as the Tart is concerned, I am making that one this coming week - it looks so wonderful and I cannot wait to try it!

  7. Ah the baby weight... I lost it quickly with the first and it stuck around with the second. I don't think it was until I started walking more that I lost it... good luck it will come off and so glad you enjoyed this one... remember salmon is good fat and butter is as bad as they once thought...

  11. Serving this on cucumber slices needs no excuse - sounds delicious! I'm not big on appetizer courses, either, unless it's for a dinner party. I do like having dinners that are entirely made up of appetizers sometimes, though.
