FFWD Compote de Pommes Two Ways


I've made applesauce on the stove top, in the microwave, in the slow cooker, and baked in the oven.  I've made it with apples and pears (I guess that would make it apple-pear sauce), with cinnamon and sugar, and plain.  I've canned applesauce several times.  I probably should have chosen the more interesting long-cooked (second) variation, but that only sounded good to me as a component of a dessert and I wanted something to eat on its own, so I went with the first version.  It was okay, but nothing to write home about.  I followed Dorie's advice and didn't bother coring or peeling the apples.  I just chopped them, cooked them, and then ran them through the food mill.  I like a chunkier applesauce so I used the larger disk, but I ended up biting into some seeds that made it through.  I guess I should have used the finer disk, although I'm not sure if I would have loved the consistency.  All-in-all this was okay, but I think I'll use one of my other applesauce recipes in the future.


Because photos of applesauce are boring, and my discussion of the recipe isn't much more exciting, here's a photo of Charlotte on her first Halloween.  She was not a fan of her pumpkin outfit!  Hopefully she'll like it better next year.

    I like this, and have made it several times - but I'm lazy and just peel the apples, then mash it all up with a potato masher...

  3. I actually found the second version more interesting to eat on its own. But it was also an awful lot of time spent tied to the stove. I'm not sure yet if I'll make it again.

  4. Did you feed Charlotte a little of the applesauce? I guess she is in sync with mom. Did you try the butter and the vanilla? It really made it more interesting… sorry it wasn't to your liking.

  6. What a cute pumpkin you have! I liked this applesauce because of the vanilla flavor, very different. I did the long cook too, but despite Dorie's notes, found the thick version delicious for just eating with spoon. I used the medium disk on my food mill, not totally fine-textured, but the seeds didn't get through.

  7. My granddauter had the same outfit as a baby. She didn't like it either. The vanilla is what made this a little different.

  9. Precious, precious pumpkin !! Love that you shared that photo. I put my younger son in a pea pod costume his first Halloween and he was less thrilled than I. The photos became our famous "pouting peapod" shots.....Since this was my first shot at homemade applesauce we loved it. Sounds like you are basically an expert so I am not surprised it ended up only "meh" for you, having a much higher bar to hit. Lucky little one will be enjoying many homemade sauces regardless I imagine :)

  10. Dear Jora, what a cutie pie - so nice to see baby Charlotte in her first Halloween costume! It took me a while to get going with my post because I felt a tad uninspired by the idea of making apple compote yet again but all is well that ends well and although a day late, I did make it!
    Maybe a bit chunkier might do the trick - but then you know all about that homemade apple compote!

  11. The best part of this Post was the picture at the end. Ohhhhh, that is a keeper - both the child and the picture. I make applesauce often and while I will use Dorie's flavoring, I will probably go back to my crockpot version. Chunky and so delicious.
