FFWD Shrimp-Filled Zucchini Blossoms

One of the great things about having a husband who gardens is having lots of squash blossoms to eat.  I've always enjoyed them, but even at farmer's markets they're hard to find and expensive.  Since Paul's been growing squash, we've had more than we know what to do this.  My favorite way to make them is stuffed with some type of cheese (and roasted cherry tomatoes if I happen to have them) and sauteed in olive oil.  We also made a grilled squash blossom pizza once which was excellent.  I didn't really want to make this recipe.  I usually avoid deep frying at home and I already made vegetable tempura for CCC last month, but we had the ingredients and it sounded relatively quick and easy so we gave it a try.....Well, we loved these.  They were absolutely delicious.  We ate them all in one sitting, accompanied by salad and some cold beet soup.  I can definitely imagine making these as an annual treat when squash blossoms are in season.

  2. I totally agree! I always have an abundance of squash blossoms and zucchini but this year my plants did not do well. Some sort of blight. However, I was lucky enough to get some blossoms from a local farmer. We loved this recipe, I used two fillings, ricotta and shrimp! The beet soup sounds yummy!

  3. I'm not a fan of deep frying either, but I was happy to have made an exception for this recipe. Luckily the key ingredient is only available once a year, otherwise I might find myself making a few too many exceptions;-)

  4. So you're a convert. Your choice of dishes to accompany the tempura blossoms is interesting..... cold beet soup. I bet it was an absolutely delicious combination. I cannot find any blossoms yet but hopefully will have some luck at my Farmers Market this Saturday. Your tempura dish for CCC last week was beautiful. I will get to commenting on them tomorrow. I'm a little behind!

  5. It's so nice that you have so much fresh vegetables in the summer, especially now that you have Charlotte to feed, too. There's nothing better for kids than fresh, healthy, organic produce.

    I enjoyed these, but don't think I'll be deep-frying them again!
