TWD Mocha Chocolate Chip Cookies
I can't even remember the last time I made simple drop cookies like these. I'm so glad I did. They were easy and delicious. With this much chocolate, what's not to like? I used a combination of white and dark chocolate and also added the apricots, but this recipe is entirely adaptable. I liked the apricots, but didn't think they were necessary. The cookies would have been delicious either way. These were excellent--very soft and gooey--when they came out of the oven, but I really liked them once they set up and cooled too. The one thing that surprised me was that I really couldn't taste the mocha flavor in the finished cookies, even though I added the full three tablespoons of instant coffee. It probably heightened the taste of the chocolate, but next time I might try adding even more coffee.

Simple, quick ('cause they are drop cookies and do not need shaping) and delicious. Nothing more to ask from the perfect cookie.
ReplyDeleteI loved them, too. As for the coffee, I've used Nescafé Gold, 2 1/2 Tbsp and I could taste it quite strongly... Lovely!
The 2 key words .. easy and delicious .. I have to try it with both white and dark next time.

Mine became drop cupcake-pan-baked "bites", but agree on their wonderful taste.

Your cookies look great and I am glad to hear that you didn't think the apricots were necessary. I also liked how easy these were to make.
ReplyDeleteYour cookies look perfect! I did not detect the coffee flavor either in the baked cookie, though it shone through in the dough. I could only taste it in the cookie if I "tasted" (thought about it, while eating)the cookie. I really enjoyed the apricots - a nice contrast to the sweetness of all the chocolate (I used all dark).
ReplyDeleteI liked these too, it reminded me how easy it was to make a tray of fresh cookies and the sense of accomplishment that goes along with it! Unbeatable!
