FFWD Curried Chicken, Peppers, and Peas en Papillote


Charlotte LOVED it!  That's really all I have to say.  I'll probably make it again in a week or two and she'll completely refuse to taste it, but for now it was a definite winner.  She even broke her "I don't eat leftovers" rule, and ate it again for lunch the next day.  The only problem was that we wished we had more.  I ignored Dorie's instruction not to prep it more than four hours ahead of time, and prepped this the night before so I could just bake it when I got home from work.  It turned out perfectly.  Served with rice (I love my rice cooker's timer setting), green beans, and sliced tomatoes, this was a healthy and delicious dinner.  I'll definitely make this one again soon.

  1. This was so easy and turned out delicious. I am looking forward to trying this method of cooking with other ingredients, This is really perfect over rice and I will do that next time.

  3. Way to go, Charlotte! (and Mom!) I didn't make this with curry because someone in my house isn't as mature an eater as Charlotte... However, I loved the technique and how easy it was to adapt to my husband's tastes.

  8. I think it’s wonderful that Charlotte’s eating what you eat…sounds like she has good taste, too! The method is a great way to make a no fuss dinner, without much clean up. Glad this was a winner!

  9. That's so wonderful it was a hit with Charlotte! Especially since the method is made for busy parents. I loved how healthy it was, too. Nice to cook with only enough oil to moisten everything and mix the flavours.

  11. LOL- can't believe little Charlotte has such an amazing palate ! Fabulous. And equally fabulous you are already anticipating her changing her mind on a dime :) Even though my sons are older I can assure you that knocking out a recipe with the prep and cook time this one is still a hot commodity in my house. Now I just get to spend that extra time on my own interests. (ok and cleaning too....:)

  12. I'll make this one again for sure simply because it was so easy. Nice to know that I can prep the pouches ahead of time because I love the idea of having these ready to pop into the oven when I get home. Kind of like homemade TV dinners;-)
